For question 2 how do you know you need to use the formula instead of finding hcf?

You should always look for HCF first. In this question there is no common factor. So then you think which of the six factorising methods is best. Since 64, 125 and x^3 are all perfect cubes it should lead you to recognise this as a difference of 2 cubes type.
